Strawberry French Toast Croissants

INGREDIENTS:

  • 6 Croissants (somewhat stale is best)

  • 2 cups of Strawberries ( sliced

  • 1/4 c Sugar

  • 2 Tbsp Butter

  • 8 oz (1 block) of Cream Cheese

  • 3/4 cup Powdered Sugar, plus extra for dusting

  • 1/4 cup Sour Cream

  • 2 Tbsp Lemon Juice

  • 2 tsp Vanilla Extract

  • 4 Eggs

  • 1 cup Half & Half

  • 1 tsp Cinnamon

  • dash of Nutmeg

  • dash of Vanilla

INSTRUCTIONS:

Coat the sliced strawberries in sugar and set aside.

Grab a dish to dredge the croissants. I like to use a 9x9 baking dish but any shallow dish will work. Add half and half, eggs, cinnamon, nutmeg & whisk together well. Set aside.

In mixing bowl, add powdered sugar, room temperature cream cheese, lemon juice, sour cream, and vanilla and beat with electric mixer until smooth.

Slice croissants and spread cream cheese mixture on each side. Then layer strawberries on one side and close the croissant halves to ensure they stay together.

Heat skillet over medium heat using 1-2 tbsp of butter.

Dredge the prepared croissants into the egg mixture, saturating both sides.

Cook the croissants in a pan over medium heat for about 6-8 minutes, flipping periodically until golden brown. Sprinkle with powdered sugar.
