Baked Shrimp Scampi

Baked Shrimp Scampi coming right up! My bandmate, Phillip Sweet, loves Shrimp Scampi so this one is for him!

INGREDIENTS:

Shrimp marinade:

1.5-2 lbs of peeled & deveined shrimp

6 tbsp Olive Oil

2 tbsp White Wine

Salt and Pepper 

Butter mixture:

3 sticks of Butter (room temp)

4 tsp Garlic

1/4 cup Shallot (minced)

6 tbsp Parsley 

Red Pepper flakes (optional)

1 1/2 cup Panko Bread Crumbs

Lemon Zest

1-2 tbsp Lemon Juice 

2 tsp oF Rosemary Leaves (chopped)

2 egg yolks 

INSTRUCTIONS:

Preheat the oven to 450 degrees.

In a mixing bowl, toss the shrimp together with the olive oil, white wine, salt and pepper. Set aside to marinate while you mix the butter mixture.

To make the butter mixture, combine the butter, garlic, shallot, parsley, red pepper flakes and mix. Once combined, add the bread crumbs, lemon zest, lemon juice, rosemary and egg yolks. Mix.

Next, pour the shrimp into the bottom of your skillet and then spread the butter mixture evenly across the top of the shrimp. Pop it in the oven for 10-12 minutes.

*Option: Put the oven setting on “Broil” to give it that golden color!

Once it’s ready, serve over your choice of pasta and top with some lemon juice.
