Kale Salad with Apples and Dates

INGREDIENTS:

1 lb Kale (stemmed and chopped)

Juice of 1 Lemon

1 1/4 tsp Kosher Salt

2 Tbsp Honey

1/2 tsp Red Pepper Flakes

1 c Olive Oil

1/2 Shallot (minced)

1/4 c Pecans (chopped)

5 Dates (pitted and chopped)

1 large Honey Crisp Apple (diced)

3 oz Pecorino Cheese (shaved)

INSTRUCTIONS:

Massage kale with 1 tbsp of lemon juice and 1/4 tsp of salt for about 5 minutes.

Combine honey, lemon juice, remaining salt, red pepper flakes and shallot in a jar. Shake well.

Toss the Kale with pecans, dates, apple and cheese. Add dressing to taste. (p. 192 of Oh Gussie! Cookbook)
