Bacon Wrapped Scallops

INGREDIENTS:

  • 24 Center Cut Bacon Slices

  • 1/2 cup Light Brown Sugar (firmly packed)

  • 1 tsp freshly Ground Pepper

  • 24 medium size Sea Scallops

  • Wooden picks

  • Garnish of choice (chopped chives, parsley or cayenne)

INSTRUCTIONS:

Preheat broiler with your oven rack 5 inches from heat.

Cook bacon in a large skillet until it JUST begins to brown, then remove from heat and drain on paper towels. You want to be be “half cooked” so that you’ll be able to wrap it around the scallop.

Combine brown sugar and pepper and coat 1 side of the bacon with the mixture. Wrap 1 bacon slice around each scallop, placing the sugared side of bacon against the widest side of the scallop and rolling. Secure with toothpick.

Line a jelly roll pan with aluminum foil and place a wire rack in the pan. Place scallops on the rack.

Broil for 2 minutes then turn scallops to broil for 2 more minutes, or until bacon is cooked and scallops are plump.

Garnish and serve!
